These mini zucchini, cheesy, vegetarian bites are a quick and easy healthy snack. They make really delicious, nutritious little appetizers!

They are very quick to put together especially if you use a food processor to grate the zucchini and buy the ready grated Parmesan, other cheeses can be added and Gruyere is another favourite here.
How to make Zucchini Cheesy Bites
- First grate the zucchini and place in a tea towel to squeeze out excess liquid.
- Heat some olive oil in a large frying pan and gently fry the onions.
- Add the grated courgettes/zucchini to the onions and gently fry for around 3-5 minutes until soft.
- Add the minced garlic, stir to combine. Turn off the heat and let cook in the residual heat.
- Let the zucchini, onions and garlic cool.
- Pre-heat your oven to 180C/350F.
- Combine the courgettes/zucchini, onions and garlic with the rest of the prepared ingredients until you have a nice sticky mixture. Season with sea salt and black pepper to your own taste.
- Roll the mixture into small balls and place on a lined baking tray.
- Bake for around 20-25 minutes until lightly golden brown.
Courgette, Cheesy, vegetarian bites can be served hot or cold and are great for lunchboxes and summer picnics.
I usually double up on the recipe. You can either freeze the unbaked bites or bake them and freeze once cooled. Both can be baked from frozen, uncooked for 20 minutes and cooked for around 15 minutes. Adjust the timings are necessary making sure they are piping hot all the way through.
