Cajun Sausage Skillet

This Cajun Sausage Skillet deliciously combines smoky andouille sausage, fire-roasted tomatoes, and a colorful medley of tender veggies.

Ingredients
 

  • 13 ounces andouille sausage
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small zucchini, cut into half moons
  • 15 ounce can fire roasted tomatoes, liquid included
  • 12 ounces frozen cauliflower rice, thawed
  • cup chicken broth
  • ½ cup red onion, sliced
  • 2 tablespoons tomato paste
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 ½ teaspoons smoked paprika
  • ½ teaspoon garlic salt
  • ½ teaspoon dried thyme
  • ¼ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper

Instructions
 

  • Slice your andouille sausage into bite size pieces.
  • Heat a large skillet to medium and add in the sausage. Sauté for a few minutes, then remove and set aside.
  • Leaving any drippings in the skillet, add in the butter, olive oil, peppers, and red onion.
  • Sauté until they are tender. Then add in the garlic and cook for another 15 seconds, making sure not to brown it.
  • Add in the dried oregano, thyme, smoked paprika, cayenne pepper and garlic salt, allowing them to toast for 30 seconds.
  • Pour in the tomatoes, tomato paste and chicken broth, then stir until well combined. Add in the cauliflower rice, zucchini and cooked sausage, then stir and simmer on low for 8-10 minutes or until the zucchini is tender, but not mushy.
