Slice your andouille sausage into bite size pieces.
Heat a large skillet to medium and add in the sausage. Sauté for a few minutes, then remove and set aside.
Leaving any drippings in the skillet, add in the butter, olive oil, peppers, and red onion.
Sauté until they are tender. Then add in the garlic and cook for another 15 seconds, making sure not to brown it.
Add in the dried oregano, thyme, smoked paprika, cayenne pepper and garlic salt, allowing them to toast for 30 seconds.
Pour in the tomatoes, tomato paste and chicken broth, then stir until well combined. Add in the cauliflower rice, zucchini and cooked sausage, then stir and simmer on low for 8-10 minutes or until the zucchini is tender, but not mushy.
