Chocolate Lebkuchen Cookies

These Chocolate Lebkuchen Cookies are such a delicious treat to make!  They are super easy and fill of chocolatey goodness.

Ingredients
 

  • 225 grams plain flour
  • 50 grams ground almonds
  • 2 teaspoons ground ginger
  • teaspoons ground cinnamon
  • ½ teaspoon of ground cloves
  • ¼ teaspoon of ground nutmeg
  • 3 teaspoons cocoa powder
  • 1 teaspoons baking powder
  • ½ teaspoon bicarbonate of soda
  • 150 grams honey
  • 80 grams butter
  • 150 g plain chocolate

Instructions
 

  • Combine the flour, ground almonds, ground ginger, cinnamon, cloves, nutmeg, cocoa powder, baking powder and bicarbonate of soda into a medium sized bowl.
  • Melt the butter and honey in a pan over a low heat, stirring until the butter melts. Take off the heat and allow to cool.
  • Pour the honey butter mixture over the dry ingredients and mix well to make a stiff dough. 
  • Heat your oven now to 180 C/160 C fan/gas 4.
  • Shape the dough into small golf ball sized balls.  Place on a lined baking tray, well spaced apart. (I used my macaron pans which make a perfect round shape).  Flatten each one to make a round cookie.
  • Bake for about 15 minutes, then cool on a wire rack.
  • Break the chocolate into pieces and place in a bowl over simmering water, heat gently.  When melted dip the cooled cookies into the chocolate to half coat or spoon the chocolate over.
  • Place the cookies on a wire rack to set.
