This Pickled Beet Salad has a medley of tender pickled beets, juicy mandarin oranges, creamy goat cheese, and crunchy toasted walnuts, all tossed in an irresistible homemade raspberry beet vinaigrette.

To Make the Raspberry Vinaigrette

  • Add all of the dressing ingredients in the cup of a bullet blender.
  • Blend until well combined and emulsified. Then set aside, while you prepare the salad.

To Make the Salad

  • Add the mixed green to a large salad bowl.
  • Slice the pickled beets in half. Just a warning, if you’ve never worked with beets before.. THEY STAIN! So use a cutting board that you aren’t worried about it staining and be sure to immediate wipe up any of the juice that might get on your counter or anything else you don’t want stained.
  • Add the sliced beets, mandarin oranges, sliced red onion, toasted walnuts and goat cheese over the mixed greens.
  • Right before serving, pour the dressing over the top and toss to combine.
