Air Fryer Red Potatoes

Tender and fluffy inside, crispy on the outside, these Air Fryer Red Potatoes make a healthy and delicious addition to any meal.

Ingredients
 

  • 1 ½ pounds baby red potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons butter, softened
  • 1 garlic clove, grated
  • 2 teaspoons fresh parsley, chopped
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic salt
  • ¼ teaspoon ground black pepper

Instructions
 

  • Preheat air fryer at 400°F.
  • Wash, scrub and dry your potatoes. Cut potatoes in half and quarter larger potatoes.
  • Add them to a mixing bowl and pour the olive oil, smoked paprika, thyme, garlic salt and pepper over the tops.
  • Toss using your hands to make sure each potato is evenly coated.
  • Place them in the basket of your air fryer in an even layer, making sure not to crowd them otherwise they won’t roast, they will steam.
  • Air fry for 20-25 minutes or until they are fork tender and have crispy edges, shaking the basket two times during cooking. Cooking time will depend on how small you’ve cut your potatoes.
  • Add the butter and garlic into a small microwave safe bowl and cook for 25 seconds to melt the butter and slightly cook the garlic.
  • Pour the garlic butter mixture over the potatoes, and toss to combine. Add the parsley on top as a garnish and serve.
