Air Fryer Twice Baked Potatoes

These Air Fryer Twice Baked Potatoes are perfectly crispy on the outside and fluffy, creamy, and cheesy on the inside.

  • Prepare one batch of (3) Air Fryer Baked Potatoes per the instructions.
  • Once the potatoes are cool enough to handle, cut each one in half. Using a spoon, remove most of the inside of the potatoes and add it to a mixing bowl.
    Be sure to leave enough of the potato behind with the skins, so when you add back the potato mixture it won’t collapse. See the photos in the post for a reference.
  • In the bowl with the potatoes, add in the sour cream, butter, garlic salt, onion powder and half the chives. Using a potato masher or hand mixer, whip the potato mixture together until fluffy and combined.
  • Fold in half the shredded cheddar cheese using a spatula.
  • Evenly divide the mixture into 6 portions and spoon it into each of the 6 potato halves.
  • Add them back into the air fryer and cook for another 5 minutes. You might have to do this in two batches, depending on the size of your air fryer.
  • Top with the remaining cheddar cheese, then continue cooking for another 2-3 minutes or until the cheese is melted and golden. Top with the bacon and remaining chives and serve.
