Smoked Salmon and Goat Cheese Crostini

This Smoked Salmon and Goat Cheese Crostini features delicate slices of smoked salmon with a lemon, dill and creamy goat cheese spread elegantly served on toasted baguette slices.

Ingredients
 

  • 1 French baguette
  • 4 ounces smoked salmon
  • 8 ounces goat cheese, softened
  • 2 tablespoons olive oil
  • 1 tablespoon capers, chopped(plus more for garnish)
  • zest of 1 ½ lemons
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh dill, chopped (plus more for garnish)
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions
 

  • Preheat oven to 425°F.
  • Slice your baguette into ½ inch thick slices.
  • Brush each side with olive oil, then place on a baking sheet.
  • Bake for 3-4 minutes. Then flip each piece over and bake 2 more minutes or until golden.
  • Allow to cool slightly at room temperature, while you mix up the spread.
  • Add the goat cheese, fresh dill, chopped capers, salt, pepper, lemon juice and zest to a small mixing bowl. Mix until well combined.
  • Spread onto slightly cooled, but still warm slices of the baguette.
  • Top each piece with some of the smoked salmon and a few capers. You can also garnish with a small sprig of fresh dill and serve.
