This colorful Watermelon Feta Salad is made with a refreshing combination of sweet and juicy watermelon, peppery arugula, fresh blueberries, and creamy feta.
Cut up your watermelon into small cubes, removing any visible seeds. Then add over the arugula.
Take your block of feta cheese and flake off small chunks. You can use store bought crumble, but I prefer buying the block as it stays fresh and creamy longer. Plus you can control the size of your crumbles.
Add the crumbles over the top along with the blueberries, chopped mint and reserved dressing, then serve.
