Watermelon Feta Salad

This colorful Watermelon Feta Salad is made with a refreshing combination of sweet and juicy watermelon, peppery arugula, fresh blueberries, and creamy feta.

Ingredients
 

For the Salad

  • 4 cups fresh watermelon, cubed
  • 2 cups baby arugula
  • 1 cup fresh blueberries
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh mint, chopped

For the Dressing

  • 2 tablespoons fresh lime juice
  • 2 tablespoons avocado oil
  • 2 teaspoons honey
  • pinch of salt

Instructions
 

To Make the Dressing

  • Add the lime juice, avocado oil, honey and salt to a small mixing bowl.
  • Whisk until well combined, then set aside.

To Make the Salad

  • Add the arugula to a serving platter or bowl.
  • Cut up your watermelon into small cubes, removing any visible seeds. Then add over the arugula.
  • Take your block of feta cheese and flake off small chunks. You can use store bought crumble, but I prefer buying the block as it stays fresh and creamy longer. Plus you can control the size of your crumbles.
  • Add the crumbles over the top along with the blueberries, chopped mint and reserved dressing, then serve.
