Lemon Pepper Baked Chicken Drumsticks

These easy Lemon Pepper Baked Chicken Drumsticks are first marinated and then baked to perfection. Tender and juicy, with the perfect balance of seasonings, these drumsticks are simply irresistible.

Ingredients
 

  • 6 chicken drumsticks
  • cup olive oil
  • ¼ cup fresh lemon juice
  • 1 ½ teaspoons of lemon pepper seasoning, divided
  • 1 teaspoon lemon zest
  • 1 teaspoon dijon mustard
  • 2 cloves garlic, grated
  • ½ teaspoon garlic salt

Instructions
 

  • Add the olive oil, lemon juice, lemon zest, 1 teaspoon of lemon pepper seasoning (reserving ½ teaspoon), dijon mustard, garlic, thyme and salt to a small mixing bowl.
  • Whisk until well combined and emulsified.
  • Place the chicken in a food storage bag, then pour the most of the marinade over the chicken, reserving about 2 tablespoons.
  • Seal up the bag, massage the marinade into the chicken, making sure all sides are coated. Allow to marinate in the fridge for 1 hour.
  • Preheat your oven to 400°F.
  • Add the chicken to a small baking sheet lined with aluminum foil and a wire rack, making sure there is plenty of room to allow the air to circulate. Sprinkle the reserved ½ teaspoon of lemon pepper seasoning over the tops.
  • Cook for 30 minutes.
  • After 30 minutes, brush the remaining 2 tablespoons of marinade over the tops of the chicken.
  • Cook for another 5-8 minutes or until the chicken reaches an internal temperature of at least 165°F, when checked with a meat thermometer and serve. Cooking times will vary, depending on the size of your drumsticks.
