Courgette Cheesy Vegetarian Bites

These mini zucchini, cheesy, vegetarian bites are a quick and easy healthy snack. They make really delicious, nutritious little appetizers!

Ingredients
 

  • 1 small red or white onion, finely chopped
  • 500 grams zucchini, grated
  • 1 garlic clove, minced
  • Zest of half a lemon
  • 1 egg, lightly beaten
  • 2-3 tablespoons Parmesan cheese, grated
  • 70 g mozzarella cheese, diced
  • 30 g breadcrumbs, around 1 slice of bread with crust
  • 20 grams ground almonds
  • 1 tablespoon fresh parsley, chopped
  • Sea Salt and Black Pepper to season

Instructions
 

  • Grate the zucchini and place in a tea towel and squeeze out excess liquid.
  • Heat some olive oil in a large frying pan and gently fry the onions.
  • Add the grated zucchini to the onions and gently fry for around 3-5 minutes until softened.
  • Add the minced garlic, turn off the heat and let cook in the residual heat.
  • Let the zucchini, onions and garlic cool.
  • Preheat your oven to 350°F.
  • Add the courgettes, onions and garlic to the rest of the prepared ingredients until you have a nice sticky mixture.  Season with sea salt and  black pepper to your own taste.
  • Roll the mixture into small balls and place on a parchment lined baking sheet.
  • Bake for around 20-25 minutes until lightly browned.
