Instructions
Grate the zucchini and place in a tea towel and squeeze out excess liquid.
Heat some olive oil in a large frying pan and gently fry the onions.
Add the grated zucchini to the onions and gently fry for around 3-5 minutes until softened.
Add the minced garlic, turn off the heat and let cook in the residual heat.
Let the zucchini, onions and garlic cool.
Preheat your oven to 350°F.
Add the courgettes, onions and garlic to the rest of the prepared ingredients until you have a nice sticky mixture. Season with sea salt and black pepper to your own taste.
Bake for around 20-25 minutes until lightly browned.
