Cowboy Caviar

This refreshing and flavorful Cowboy Caviar is a vibrant medley of colorful veggies and beans, tossed together in a zesty lime vinaigrette.

Ingredients
 

  • 1 ½ cups cherry tomatoes, chopped
  • 1 ½ cups frozen corn, thawed
  • 15 ounce can black beans, drained and rinsed
  • 15 ounce can black eyed peas, drained and rinsed
  • 2 Haas avocados, diced
  • 1 orange bell pepper, finely chopped
  • ½ cup red onion, diced
  • 1 medium jalapeño pepper, diced
  • cup fresh cilantro, chopped

For the Dressing

  • cup fresh lime juice
  • cup olive oil
  • 1 clove garlic, roughly chopped
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey, or Agave if Vegan
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions
 

  • Add all of the dressing ingredients to the cup of a bullet blender or immersion blender.
  • Mix until well combined and emulsified, then set aside so the flavors can meld.
  • In a large mixing bowl, add in all the remaining ingredients.
  • Pour the dressing over the top.
  • Gently toss to combine, making sure everything is well coated in the dressing.
  • Serve with tortilla chips on the side.
