Strawberry Chia Seed Jam

This vibrant Strawberry Chia Seed Jam combines the sweetness of juicy strawberries with the wholesome richness of honey.

  • Wash, dry, hull and chop your strawberries.
  • Add them to a saucepan. Pour in the lemon juice and honey.
  • Simmer on low for 5-6 minutes or until they start to break down. At this point, you can mash them down with a potato masher or fork, otherwise you can leave it chunky.
  • Remove from the heat and stir in the chia seeds and vanilla extract.
  • Allow to sit at room temperature until it has cooled and thickened. It will thicken further in the fridge.
