Berry Cheesecake Salad

This Berry Cheesecake Salad is the ultimate no-bake dessert made with a light and creamy cheesecake mousse and loads of fresh berries.

Ingredients
 

  • 1 ½ cups heavy cream
  • 8 ounces cream cheese
  • 1 cup strawberries, chopped
  • cup raspberries
  • ½ cup blueberries
  • cup monk fruit/allulose
  • ½ teaspoon vanilla extract

Instructions
 

  • Add the cream cheese to a mixing bowl and fluff up using a hand mixer. Then set aside.
  • Pour the heavy cream into a separate mixing bowl and whip with a hand mixer.
  • Add in the cream cheese, sweetener and vanilla, then continue mixing.
  • Add the fresh berries on top.
  • Fold the berries into the cream mixture.
  • Chill it in the fridge until you are ready to serve.
