Cheesy Chicken Fritters

Crispy on the outside, moist and tender inside, these Cheesy Chicken Fritters are made with juicy chicken, melty mozzarella, and fresh peppers.

Ingredients
 

  • 3 cups cooked chicken, chopped
  • 1 ½ cups mozzarella cheese, shredded
  • ½ cup red bell pepper, diced
  • ½ cup Greek yogurt
  • cup scallions, chopped
  • cup almond flour
  • 2 whole eggs, beaten
  • 2 cloves garlic, grated
  • zest of 1 lemon
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • olive oil, for frying (or other healthy oil)

Instructions
 

  • Add the eggs, Greek yogurt, grated garlic, lemon zest, salt and ground black pepper into a small mixing bowl.
  • Whisk until combined, then set side.
  • In a large mixing bowl, add in the chicken, mozzarella cheese, almond flour, red bell peppers and scallions. Mix until well combined. Pour the egg mixture over the top and mix.
  • Scoop ¼ cup of the mixture and form into small patty and place on parchment paper. Repeat with the remaining mixture.
  • Once all the patties have been formed, heat a large skillet to medium and add in the oil.
  • Fry the patties for a few minutes on each side. Set on paper towels to drain before serving.
