Frozen Yogurt Berry Bark

This Frozen Yogurt Berry Bark is the easiest spring and summer treat made with creamy Greek yogurt, fresh berries, and crunchy cashews.

Ingredients
 

  • 2 ½ cups plain Greek yogurt
  • cup strawberries, sliced
  • cup blueberries
  • ¼ cup sugar-free honey
  • 2 tablespoons cashews, halved
  • 1 ½ teaspoons vanilla extract

Instructions
 

  • Add the Greek yogurt, sugar-free honey and vanilla extract into a mixing bowl.
  • Whisk until well combined.
  • Using an offset spatula, spread onto a baking sheet lined with parchment paper or a Silpat.
  • Add the sliced strawberries over the top, slightly pressing into the yogurt. Add in the blueberries. Lastly, add in the cashews and freeze for at least 4 hours or overnight.
  • Once fully frozen and set, break apart using a sharp knife and it’s ready to enjoy.
