Greek Chicken Bowl

Tender marinated and sautéed chicken, fresh crisp veggies and classic Tzatziki sauce makes this Greek Chicken Bowl a filling and satisfying meal.

  • Prepare the Tzatziki sauce and chill it in the fridge to allow the flavors to meld, while you prepare the chicken.
  • Add the olive oil, red wine vinegar, dried oregano, dried dill, dijon mustard, grated garlic, salt and pepper to a mixing cup.
  • Whisk to combine, then pour into a food storage bag with your chicken.
  • Seal up the bag and marinate in the fridge for 1 hour.
  • Heat a large skillet to medium and add in your chicken. Cook for several minutes on each side or until they reach an internal temperature of at least 165°F.
  • While the chicken is cooking, chop up all the veggies and have them ready.
  • Once the chicken is cooked through, remove it from the skillet and let it rest for a few minutes before slicing.
  • Take your serving bowls and add either cauliflower rice or lettuce, I chose to use cauliflower rice. Then add the sliced chicken, cherry tomatoes and pepperoncini in sections.
  • Then add the cucumber, Kalamata olives, red onion, feta cheese (also in sections) and a dollop of the Tzatziki in the center and serve.
