Green Beans with Crispy Prosciutto

These Green Beans with Crispy Prosciutto are tossed in garlic butter and then topped with savory, crispy prosciutto and toasted pine nuts.

Ingredients
 

  • 24 ounces green beans, trimmed
  • 3 slices prosciutto, thinly sliced
  • 4 cloves garlic, minced
  • 3 tablespoons salted butter
  • 2 tablespoons pine nuts, toasted
  • ¼ teaspoon ground black pepper

Instructions
 

  • Preheat oven to 425°F.
  • Add the prosciutto to a small baking sheet lined with parchment paper.
  • Bake in the oven for 8-10 minutes or until crispy. Then set it aside until it’s cool enough to handle.
  • Bring a large pot of water to a boil. Add in a good amount of salt and the green beans, then boil for 8 minutes
  • Plunge the green beans into a bowl of ice water to stop the cooking and set the beautiful green color. Once cooled, drain and dry with paper towels. Then set aside.
  • Heat a large skillet to medium low and add in the butter. Once melted, add in the garlic and sauté for about 20 seconds, making sure not to brown it or it will become bitter.
  • Add in the green beans and toss in the garlic butter. Add in the ground black pepper and once heated through, turn off the heat.
  • Crumble the cooled crispy prosciutto over the green beans and sprinkle the toasted pine nuts on top, then serve.
