Italian Sausage and Peppers Cabbage Skillet

This Italian Sausage and Pepper Cabbage skillet is a quick, easy and flavorful dinner that's perfect for busy weeknights.

Ingredients
 

  • 5 sweet Italian sausage links
  • 4 cups green cabbage, shredded
  • 1 cup crushed tomatoes
  • cup chicken broth
  • ½ large green bell pepper, sliced
  • ½ large red bell pepper, sliced
  • ½ yellow onion, sliced thin
  • 4 cloves garlic, minced
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions
 

  • Heat a large skillet to medium, add in the olive oil and sausage.
  • Fry for a few minutes on each side or until almost cooked through. It will finish cooking later.
  • Remove the sausage and set it aside. Add in the butter and once melted, add in the bell peppers, onion, half the salt and black pepper.
  • Sauté for a few minutes, then add in the garlic and continue sautéing for another 20 seconds.
  • Pour in the chicken broth to deglaze the pan, then stir in the crushed tomatoes, cabbage, basil and remaining salt.
  • Cover and simmer for 5-7 minutes or until the cabbage has softened. Add the sausage back in and simmer until it’s cooked through.
