Add the ground beef to a large skillet over medium heat, add in the salt and cook until browned.
Remove and set it aside, then add in 1 tablespoon of the butter and the diced onions.
Sauté until tender, then add in the minced garlic and sauté for another 30 seconds.
Pour in the remaining butter, ranch seasoning, au jus mix, pepperoncini brine, Worcestershire sauce, beef broth and ground back pepper, then mix to combine.
Whisk in the xanthan gum, then add the sliced pepperoncini peppers and ground beef back into the skillet.
Mix to combine and simmer for 5 minutes or until the sauce has thickened.
Spoon over the toasted low carb buns of your choice and serve immediately. If you're not following a low carb diet, you can certainly use any bun that you like.
