Triple Berry Salad

This colorful Triple Berry Salad is a delicious combination of sweet, juicy berries, creamy goat cheese, and mixed greens, tossed in honey lime vinaigrette.

Ingredients
 

For the Salad

  • 5 ounces spring greens mix
  • 1 cup fresh strawberries
  • cup fresh raspberries
  • ½ cup fresh blueberries
  • ½ cup sliced almonds, toasted
  • cup goat cheese, crumbled
  • cup red onions, sliced thin
  • ¼ cup fresh mint, chopped

For the Dressing

Instructions
 

  • Wash and dry your assortment of fresh berries. Slice the strawberries and set them aside.
  • Add all the dressing ingredients into a dressing shaker or mixing bowl.
  • Shake or whisk until well combined and emulsified, then set aside while you prepare the salad.
  • Add the mixed greens to a large serving bowl. Add the fresh berries and red onion over the top of the greens.
  • Add in the toasted almonds, goat cheese and fresh mint.
  • Right before serving, pour the dressing over the top, toss and serve.
