Zucchini Pizza Boats

Easy, cheesy and perfectly saucy these Zucchini Pizza Boats pack everything you love about pizza into tender zucchini halves.

Ingredients
 

  • 3 medium zucchini
  • cup shredded mozzarella cheese
  • 6 tablespoons Italian sausage, cooked and crumbled
  • 6 tablespoons pizza sauce
  • cup mini pepperoni

Instructions
 

  • Preheat oven to 375°F.
  • Take each zucchini, wash, dry and slice in half lengthwise to give you 6 halves. Scoop out of the centers of each half, creating a well to fill.
  • Spoon in 1 tablespoon of pizza sauce and spread evenly in each half. Add 1 tablespoon of the cooked Italian sausage, spreading evenly.
  • Add some mozzarella cheese over the sausage. Top with the mini pepperoni.
  • Place in a 9 x 13 casserole baking dish that’s been sprayed with olive oil.
  • Bake for 20-25 minutes or until cooked through and the cheese is melted and golden.
