    With this simple yet delicious recipe, broccoli florets are first tossed in garlicky olive oil with a simple sprinkle of salt and a dash of pepper. They're roasted under high heat until slightly crispy and caramelized, then topped with a tangy Romano and red pepper flakes.

    • For a shortcut, look for the prepacked fresh florets in the produce section at the grocery store.
    • Always wash your produce. Even if the package says that it's been prewashed, give your veggies a good rinse under cool water.
    • The key to roasting, not steaming, is to make sure you remove as much water as you can after washing the broccoli. This also helps the oil adhere to it better.
    • Try to cut the pieces into as even sizes as possible. This helps them roast evenly.
    • If you're roasting larger pieces, you may want to take a fork and flip them over halfway through cooking. This helps both sides get good color.

    Fridge: Allow the broccoli to cool, then transfer it to an airtight container. Store in the fridge for up to 3-4 days.

    🔄 Substitutions and Additions

    • Lemon zest: Grate the zest of a fresh lemon over the roasted broccoli just before serving. It adds a wonderful pop of fresh citrus flavor.
    • Other seasonings: Feel free to season with any of your favorites. Smoked paprika, a pinch of cayenne, chili powder, onion powder, or tahini are all great options.
    • Other veggies: You can add other veggies to the pan. Sliced red onions, cauliflower florets, bell peppers, mushrooms, and zucchini are just a few ideas.

    Can I Use Frozen Broccoli?

    You can, but it will not have the exact results because it contains more water. If you use frozen, make sure to thaw and drain it really well before seasoning and roasting.

    There are two keys to crispy roasted broccoli. Cooking it on high heat is the first one. It needs to start out in the hot oven so it doesn't start to steam.

    The other main thing to keep in mind, is that you need to make sure your florets are dry. Moisture will cause broccoli to become mushy while it's cooking.

    How Much Broccoli Do I Need Per Person?

    This can vary depending on what else you're serving it with. In general, if you're serving it with a hearty main course, you'll need to plan on about ½ cup serving per person.

    Keep in mind that it reduces in size as it cooks. For a ½ cup serving of roasted broccoli, you will need just under a cup of raw.
