    • Napa cabbage
    • Red cabbage
    • English cucumber
    • Red bell pepper
    • Peanut Sauce
    • Rice vinegar

    🔪 How to Make Thai Crunch Salad

    Shred and wash your Napa cabbage. 

    Tip: I like to use a salad spinner to help get it nice and dry.

    Add it to a large mixing bowl.  Next add in the red cabbage, cucumber, bell pepper, shredded carrots, scallion, cilantro and chopped peanuts.

    Toss everything together until well combined, then add the sesame seeds on top.

    In a small mixing bowl, add in the peanut sauce, rice vinegar and toasted sesame oil.

    Whisk to combine.

    How Many Carbs are in a CPK Thai Crunch Salad?

    Though this recipe may remind you of a CPK Thai Crunch salad, the nutrition values are quite different. For example, there are 37 net carbs and about 25 grams of added sugar in the restaurant version.

    In comparison, this homemade low carb Thai crunch recipe only has 6 net carbs per serving and the only sugar it contains is what is naturally found in the veggies.

    Thai Crunch Salad Recipe Variations

    • Add extra protein: Add grilled shrimp or shredded chicken breast. You can even add slices of leftover steak.
    • Add different veggies: This salad calls for used Napa cabbage and red cabbage, but you can add spinach or broccoli slaw. Zucchini adds a nice crunch to the salad as well.
    • Other herbs to consider: Fresh cilantro gives this salad a classic Asian flavor, but feel free to add other fresh herbs you have on hand. A little bit of chopped fresh mint, lemon thyme, or basil are all good options.
    • Add some heat: This dressing is full of robust flavors but if you want to add a kick of spice to it, you can add a pinch of cayenne or some red pepper flakes.

    Tips for Making the Best Thai Salad

    • This salad is fairly hearty and can hold up well for a day or two in the fridge in an airtight container. Though for maximum crunchiness, you should wait to add the dressing right before serving it.
    • To help keep your cucumbers crunchy, cut them in half length-wise, then take a small spoon and cull out the seeds. You will end up with slices that look like half-moons.
    • Make extra peanut dressing! You can use it as a dip for fresh veggies or drizzle it over grilled veggies.
    • When you’re making the dressing, if you prefer it to have a thinner consistency, you can thin it out a little bit with extra lime juice.

    What Can I Use for the Dressing if I Have a Peanut Allergy?

    Almond butter works well instead of peanut butter. If you can't have almonds either, try using sunbutter. It's made using sunflower seeds and is commonly used in place of nuts in recipes.

    Ingredients
     

    For the Salad

    • 6 cups Napa cabbage, shredded
    • 1 cup red cabbage, shredded
    • 1 small English cucumber, seeded and cut into half moons
    • ½ red bell pepper, sliced thin
    • ¼ cup peanuts, chopped and toasted
    • 1 medium carrot, shredded
    • 1 scallion, sliced thin
    • 2 tablespoons fresh cilantro, chopped
    • 2 teaspoons sesame seeds

    For the Dressing

    • ¾ cup peanut sauce
    • ¼ cup rice vinegar
    • 1 teaspoon toasted sesame oil

    Instructions
