Ingredients

  • 8 whole eggs, hard boiled and peeled
  • 16 medium shrimp, peeled, deveined, tails off
  • ⅓ cup mayonnaise
  • 2 teaspoons lemon juice
  • 2 teaspoons cajun seasoning
  • 1 tablespoon olive oil
  • 1 teaspoon dijon mustard
  • 1 teaspoon hot sauce
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  • Dry your shrimp, then sprinkle half of the cajun seasoning over both sides of the shrimp.
  • Heat a large skillet to medium and add in the olive oil and shrimp, then sauté for about 2 minutes on each side, or until they are cooked through. Set the shrimp aside, keeping them warm.
  • Slice the hard boiled eggs in half, then scoop out the yolks into a mixing bowl. Add the whites to your serving platter. Using a fork, mash up the yolks.
  • Add in the mayonnaise, lemon juice, dijon mustard, hot sauce, salt and black pepper. Whip the mixture until well combined.
  • Spoon the filling into the wells of each egg white, then top each with 1 shrimp and serve.
