No Bake Granola Bars

  • Preheat oven to 350°F.
  • Add the chopped pecans, walnuts, almonds and sunflower seeds to a small baking sheet lined with parchment paper. Bake for 8 minutes or until they are starting to brown and are fragrant.
  • Pour into a large mixing bowl, then add in the shredded coconut, pumpkin seeds, sweetener, golden flaxseed, cinnamon, nutmeg and salt.
  • Stir to combine, then add most of the chocolate chips, reserving some for the top. Stir until combined.
  • Have an 8” x 8” baking dish lined with parchment paper ready.
  • Add the almond butter and honey into a microwave safe bowl and heat for 1 minute. Stir to combine then immediately pour over the bowl with the nuts, seeds and coconut.
  • Quickly mix to combine, then pour into the parchment lined casserole and press into one even layer. Some of the chocolate will melt, and that’s ok. Let the mixture cool slightly, before pressing in the reserved chocolate chips over the top.
  • If the almond butter/honey mixture cools too quickly, it will be more difficult to mix with the nuts and seeds. You can heat everything up in the microwave in 30 second increments to make them more pliable. If they are still not mixing well, you can add a little more melted almond butter and honey.
  • Chill in the fridge for 1-2 hours or until fully set. Then cut into 8 bars and they’re ready to serve.

Recipe Notes

If you're not trying to keep your sugar low or following a low carb diet, you can use regular honey and chocolate chips if you'd like.
