If you’re a fan of granola bars but try to avoid all the unhealthy additives in store bought brands, you’ll love this recipe. I use all sugar-free and low carb ingredients like freshly roasted nuts and seeds, sugar free chocolate, honey and almond butter.
You’ll be surprised at just how easy they are to make and the best part is, you don’t even have to bake them. Simply roast the nuts and seeds, heat up the almond butter and honey, mix and press out into the best chewy granola bars without oats you’ve ever had.

They’re kid friendly, low in carbs and sugar, and gluten-free. They also make great edible gifts for anyone who’s trying to eat healthy or watch their sugar intake. You can make these with a number of variations based on what you like or have on hand. I’ve listed some ideas down below.
🛒 Ingredients for Low Carb Granola Bars
- Unsweetened shredded coconut
- Sugar-free chocolate chips
- Pecans
- Walnuts
- Almonds
- Almond butter
- Sugar-free honey (or honey)
- Pumpkin seeds
- Sunflower seeds
- Monk fruit/allulose
- Ground golden flaxseed
- Ground cinnamon
- Ground nutmeg
- Salt

🔪 How to Make Sugar-Free Granola Bars
Preheat oven to 350°F.
Add the chopped pecans, walnuts, almonds and sunflower seeds to a small baking sheet lined with parchment paper.

Bake for 8 minutes or until they are starting to brown and are fragrant.

Pour into a large mixing bowl, then add in the shredded coconut, pumpkin seeds, sweetener, golden flaxseed, cinnamon, nutmeg and salt.

Stir to combine, then add most of the chocolate chips, reserving some for the top. Stir until combined. Have an 8” x 8” baking dish lined with parchment paper ready.

Add the almond butter and honey into a microwave safe bowl and heat for 1 minute. Stir to combine then immediately pour over the bowl with the nuts, seeds and coconut.

Quickly mix to combine, then pour into the parchment lined casserole and press into one even layer. Some of the chocolate will melt, and that’s ok.
If the almond butter/honey mixture cools too quickly, it will be more difficult to mix with the nuts and seeds. You can heat everything up in the microwave in 30 second increments to make them more pliable. If they are still not mixing well, you can add a little more melted almond butter and honey.

Let the mixture cool slightly, before pressing in the reserved chocolate chips over the top.

Chill in the fridge for 1-2 hours or until fully set. Then cut into 8 bars and they’re ready to serve.
💡 Tips for Healthy Chewy Granola Bars
- Work quickly spreading the granola mixture into the casserole, as the almond butter and honey mixture will become more difficult to mix as it starts to cool.
- If it cools too quickly and you have trouble spreading the granola out, heat it in the microwave in 30 second increments until they become more pliable.
- One alternative to adding in the chocolate chips is you can melt the chocolate in the microwave, then drizzle the chocolate over the tops. You can even add a little flaked sea salt over the chocolate.
- Don’t skip roasting the nuts and sunflower seeds, as roasting them really helps give them great flavor. If your sunflower seeds are already roasted, then you don’t need to roast them again. Mine was raw, so I roasted them.
- If your pumpkin seeds are raw and haven’t been roasted, be sure to add them to the baking sheet and roast them along with the other nuts. Mine were already roasted, so I skipped roasting them with the nuts.

Store leftovers granola bars in the fridge in an airtight container for 5-7 days or freeze.

🔄 Substitutions and Additions
- For a toasted coconut flavor, you can also toast the shredded coconut for just a couple of minutes. Be sure to watch it closely because it can go from toasted to burnt in seconds!
- If you don’t have monk fruit/allulose, you can use all monk fruit instead at the same ¼ cup. If all you have on hand is allulose, you can use ⅓ cup of it instead of the monk fruit mixture. If you have neither, you can you an erythritol-based sweetener like Swerve, but it might take away from the chewy texture of the bars, as erythritol crystalizes as it cools. Whichever sweetener you use, make sure it's powdered, otherwise the bars could have a gritty texture.
- Cashews, macadamia nuts, pistachio and/or hazelnuts can be added or substituted or use any combination of these nuts. Just make sure you chop and roast them first for the best flavor.
- If you’re not trying to keep your sugar low or following a low carb diet, you can use regular honey.
- If you don’t have almond butter, you can use peanut butter instead. I’d opt for one with no added sugar or other ingredients. Ingredients in your nut butter should be only nuts and salt.
- To add a pumpkin spice twist, you can use Pumpkin Pie Spice instead of the ground cinnamon and nutmeg.
- If you’re not concerned about carbs or sugar, you can also add in some dried cranberries or raisins.

Are no bake granola bars healthy?
Absolutely, well at least these are! Because I use all sugar-free ingredients, there are no unhealthy additives or other ingredients to worry about.
How to make granola bars without an oven?
This is such an easy recipe that doesn't require baking them in the oven. The only thing an oven is used for is to roast the nuts. If you purchase nuts that have already been roasted, you can skip that step all together.
