🛒 Ingredients for Almond Flour Crackers

    • Super fine almond flour: Gives the crackers a smooth, crisp texture.
    • Fresh rosemary: Chopped finely so it blends into the dough.
    • Garlic powder: Delivers a clean, even garlic flavor that won’t burn in the oven.
    • Egg: Acts as the binder to hold everything together.
    • Salt: Balances the herbs and garlic without overpowering them.
    • Black pepper: Just a little kick to round things out.

Blend until the dough comes together.

Turn the dough out onto parchment paper and form a disc.

Place another piece of parchment paper over the top and using a rolling pin, roll the dough out to about ¼”.  If you don’t roll it out thin enough, the crackers won’t crispy up properly. You can make them a little larger if you’d like, just be sure the dough is thin enough to achieve that crispy texture.

Using a 2” biscuit cutter, cut out the crackers and place them on a baking sheet lined with parchment paper.  Gather up the scraps, roll them out again and cut out the remaining crackers.

    💡 Tips

    • Use super-fine almond flour, not regular almond meal, for the best texture.
    • Let the dough rest for 5 minutes after blending if it feels too soft to roll.
    • Rolling between two sheets of parchment makes cleanup easier.
    • If your dough cracks while rolling, just press it back together with your fingers.
    • Watch closely while baking baking, because they go from golden to burnt quickly.

    ☑️ Storage Instructions

If you have leftovers, store them at room temp for up to several days. I like to place a paper towel between the layers of crackers to help keep them fresh and crisp.

You can also store them in a freezer-safe container for up to 2 months. Thaw at room temperature and crisp in a low oven if needed.

🍴 Ways To Serve with Crisp Rosemary Crackers

Why is My Dough Too Crumbly?

You may have packed the almond flour. Try adding a tiny splash of water and pulsing again.

Can I Make These Without a Food Processor?

Yes. Just mix by hand or with a pastry blender until the dough comes together.

How Do I Know When They’re Done?

Look for light golden edges. They’ll crisp up more as they cool.

Why Did My Crackers Turn Out Soft?

Either they weren’t rolled thin enough or needed more bake time. Always cool on a wire rack.

Can I Make the Dough Ahead?

Yes. Wrap it in plastic and chill for up to 2 days before rolling and baking.
