🔪 How to Make Chicken Fritters
Add the eggs, Greek yogurt, grated garlic, lemon zest, salt and ground black pepper into a small mixing bowl.
Whisk until combined, then set side.
In a large mixing bowl, add in the chicken, mozzarella cheese, almond flour, red bell peppers and scallions.
Mix until well combined.
Pour the egg mixture over the top and mix.
Scoop ¼ cup of the mixture and form into small patty and place on parchment paper. Repeat with the remaining mixture.
Once all the patties have been formed, heat a large skillet to medium and add in the oil.
Fry the patties for a few minutes on each side.
Set on paper towels to drain before serving.
💡 Tips
- Pat the cooked chicken dry if it seems wet. It helps the fritters hold together better.
- Wet your hands slightly when shaping the patties so they don’t stick.
- If the mix feels too wet, add an extra tablespoon of almond flour.
- Let the fritters cook undisturbed until the bottoms are golden before flipping.
- Fry in batches so you don’t overcrowd the pan, or they’ll steam instead of crisp.
☑️ Storage Instructions
Fridge: Store leftover in an airtight container up to 4 days. You can reheat in a skillet or air fryer to keep the edges crisp.
Freezer: Freeze the fritters flat on a sheet pan first, then transfer to a zip-top bag. Reheat from frozen in the oven or air fryer for best texture.

- Veggies: Add chopped spinach or shredded zucchini for extra veggies. Just make sure you squeeze out any moisture first.
- Spice: Stir in a pinch of crushed red pepper or drizzle with a little Siracha if you like heat.
- Bacon: For a smoky flavor, mix in a little crumbled cooked bacon.
- Topping: Sprinkle a little parmesan on each fritter while hot for extra flavor on top.

Why Are My Fritters Falling Apart?
If the mixture is too wet, they won’t hold. Make sure your chicken isn’t overly moist and add a bit more almond flour if needed.
Can I Use Canned Chicken?
You can, but fresh or rotisserie chicken has a better texture. If using canned, drain and pat dry very well.
Can I Make These Ahead of Time?
Yes, shape the patties and refrigerate them on parchment for up to a day before frying.
How Do I Know When They’re Cooked Through?
They’ll be golden brown on both sides and firm in the center. If unsure, cut one open to check.
What Dipping Sauce Goes well with These Cheesy Fritters?
Try them with Homemade Ranch, Honey Mustard, Tzatziki or even a little drizzle of Hot Honey Sauce. They’re also great just as they are.
