    These blueberry overnight oats make waking up in the morning totally worth it. Everything chills overnight, turning into creamy oats with a sweet burst of blueberry in every spoonful. What makes them extra special is the quick homemade blueberry sauce stirred right in, infusing the oats with rich berry flavor.

    One of the things I love most is just how versatile this recipe is. Some days I eat it straight from the fridge, other times I top it with toasted almonds for crunch. Whether it’s breakfast before work or a quick and healthy snack after the gym, this recipe always hits the spot.

    🛒 Ingredients Overnight Oats with Blueberries

    • Old fashioned rolled oats
    • Blueberries
    • Unsweetened coconut milk
    • Greek yogurt
    • Sliced almonds
    • Honey
    • Water
    • Chia seeds
    • Lemon juice
    • Vanilla extract

    🔪 How to Make Blueberry Overnight Oats

    Add the blueberries, honey, water and lemon juice to a small saucepan over medium low heat.

    Simmer for 4-5 minutes or until the blueberries have softened and given up their juices.

    Remove from the heat and set aside to allow them to cool.

    In a large mixing bowl, add in the rolled oats, coconut milk, Greek yogurt, chia seeds and vanilla extract.

    Once the blueberries have cooled, add them to the mixture and mix until well combined.

    Cover with plastic wrap and allow to set in the fridge for at least 4 hours or overnight is best.

    When you’re ready to serve, top with some fresh blueberries, toasted almonds and a drizzle of honey.

    • Use rolled oats, not quick oats, for the best creamy texture.
    • Let the oats chill overnight for the thickest, creamiest consistency.
    • If the oats are too thick in the morning, add a splash of coconut milk before serving.

    Fridge: Store leftover in jars or airtight containers for up to 4 days.

    Freezer: Freeze in jars without toppings for up to 2 months. Thaw overnight in the fridge before eating.

    Not for this recipe, they stay too chewy. Rolled oats soften best overnight.

    Nope, they soften perfectly as they soak.

    Can I Skip the Chia Seeds?

    Yes, but they help thicken the oats and add nutrients.

    Why Are My Oats So Runny?

    They probably didn’t sit long enough. Give them a full 8 hours.

    Ingredients
     

    • 1 cup old fashioned rolled oats
