    To Make the Dressing

    Add the dressing ingredients in a salad dressing shaker cup.

    Shake until well combined and emulsified, then set aside.

    To Make the Salad

    Wash, dry and slice the cucumbers thinly.

    Add the cucumbers to a large mixing bowl.

    Cut the red onion into thin slices.

    Add the red onion, toasted pine nuts, chopped dill, chives and mint in the bowl with the cucumbers.

    Pour the dressing over the top.

    Toss to combine, making sure everything is coated with the dressing.

    You can either serve immediately or chill it in the fridge for at least 1 hour to allow the flavors to meld before serving.

    💡 Tips for Making Cucumber Salad

    • Use English cucumbers: They’re less watery and have thinner skins, making them ideal for this recipe.
    • Slice cucumbers evenly: A mandoline slicer helps create thin and consistent thickness. It also helps to zip through the slicing process quickly.
    • Toast the pine nuts: Toasting brings out their nutty flavor, so you really don’t want to skip this step.
    • Mix dressing separately: Shaking the dressing ensures it’s evenly emulsified before pouring it over the salad.
    • Chill the salad: Let the salad rest in the fridge for 30 minutes to allow the flavors to meld.

    ☑️ Storage Instructions

    Store leftover cucumber salad in an airtight container for up to 2 days. I do not recommend freezing it because the cucumbers and herbs will lose their texture when thawed.

    Why is My Cucumber Salad Watery?

    Cucumbers naturally release water. If you’re making it several hours ahead of time, the best way to prevent that, is to slice the cucumbers and sprinkle them with a little salt. Place them in a colander for half an hour, so they can release some of their moisture.

    Absolutely! Not only are cucumbers low carb and low calorie, but cucumbers are also rich in vitamins and minerals. They are a great source of vitamin B1, B2, B3, B5, B6, vitamin C, folic acid, iron, calcium, magnesium, phosphorus, zinc, and potassium!

    Shouldn’t I Peel The Cucumbers for This Salad?

    It is not necessary. I use English cucumbers in this recipe, which have thin skins, so you do not have to peel them completely. Plus, the peeling contains a good bit of fiber and nutrients you lose out on.

    Ingredients
     

    For the Salad

    • 2 English cucumbers, sliced thin
    • ⅓ cup red onion, thinly sliced
    • ¼ cup pignoli, (pine nuts), toasted
    • 1 tablespoon fresh dill
    • 1 tablespoon fresh chives, chopped
    • 1 tablespoon fresh mint, chopped

    For the Dressing

    • ¼ cup apple cider vinegar
    • 2 tablespoons olive oil
    • 1 tablespoon sugar-free honey, (or Agave if Vegan, or honey if not low carb)
    • ¼ teaspoon salt
    • ¼ teaspoon ground black pepper

    Instructions
     

    To Make the Dressing

    • Shake until well combined and emulsified, then set aside.
