    Heat a Dutch oven or large pot to medium and add in the olive oil, carrots, celery, onion, pepper and half the salt.

    Sauté for 5 minutes or until almost tender, then add in the garlic.

    Sauté for another 20 seconds, making sure not to brown it or it will become bitter.

    Pour in the chicken broth and remaining salt, then simmer partially covered for 10 minutes.

    Stir in the orzo and continue simmering for 8-9 minutes.

    Continue cooking for another 2-3 minutes or until the orzo is al dente, making sure not to overcook it.
