🔪 How to Make Mississippi Sloppy Joes
Add the ground beef to a large skillet over medium heat, add in the salt.

Cook until browned.

Remove and set it aside, then add in 1 tablespoon of the butter and the diced onions.

Sauté until tender, then add in the minced garlic and sauté for another 30 seconds.

Pour in the remaining butter, ranch seasoning, au jus mix, pepperoncini brine, Worcestershire sauce, beef broth and ground back pepper, then mix to combine.

Whisk in the xanthan gum, then add the sliced pepperoncini peppers and ground beef back into the skillet. Mix to combine and simmer for 5 minutes or until the sauce has thickened.

Spoon over the toasted low carb buns of your choice and serve immediately.

If you're not following a low carb diet, you can certainly use any bun that you like.
💡 Tips
- Drain excess grease after browning to prevent the beef from being greasy.
- Add the garlic only after the onions soften to avoid bitter, overcooked garlic.
- Whisk the xanthan gum directly into the hot liquid to prevent clumping.
- Let the mixture simmer until thick enough to cling to the beef and stay on the bun.
- Taste at the end and adjust salt carefully since ranch seasoning and au jus already contain salt.

☑️ Storage Instructions
Fridge: Store the cooled Mississippi Sloppy Joe mixture in an airtight container for up to four days.
Freezer: Freeze the beef mixture without buns for up to two months and thaw overnight before reheating.
🍴 What to Serve with Sloppy Joes
You can serve these sloppy joes with any of your favorite sides. Here are some of my favorites:
- Classic Coleslaw
- Baked Parmesan Zucchini Fries

- Air Fryer Potatoes
- Roasted Cauliflower Mac and Cheese
- Roasted Cabbage Steaks

🔄 Substitutions and Additions
- Mushrooms: Add sliced mushrooms with the onions for extra savory depth.
- Turkey: Use ground turkey if you want a lighter option.
- Heat: Add a pinch of crushed red pepper for gentle heat.
- Cheese: Mix in shredded provolone or mozzarella right before serving for a cheesy finish.
- Cauliflower: Spoon the mixture over mashed cauliflower instead of buns for a fork friendly option.

Are Mississippi Sloppy Joes Spicy?
They are more tangy than spicy, but you can control heat with the amount of pepperoncini used.
Can I Skip the Xanthan Gum?
You can, but the sauce will be looser.
Why Are They Called Mississippi Sloppy Joes?
It gets its name from the famous Mississippi pot roast that inspired it. That original dish was created by a home cook named Robin Chapman in Ripley, Mississippi in the 1990s, and the name stuck. So when ground beef meets those classic Mississippi pot roast flavors with ranch seasoning, au jus, pepperoncini, and butter, the name carries over to match the roast.
Can I Make Them Ahead of Time?
Yes, the flavor gets even better after sitting and reheats well on the stove.
