    Grate your cucumber using a box grater.

    Squeeze all of the water out using cheese cloth or paper towels.  You really want to get as much of the moisture out as possible, otherwise it can make your sauce watery.

    Add the cucumber to a mixing bowl, then add in the remaining ingredients.

    Mix until well combined.

    Cover and allow it to chill in the fridge for at least 1 hour.  This will allow the flavors to meld.

    • Use Greek yogurt for its thick and creamy texture, which is key to get that rich, tangy flavor.
    • Grate the cucumber finely to ensure it blends well and enhances the sauce's texture without overpowering it.

      I find that if I salt the grated cucumber and let drain for an hour before mixing with the rest of the ingredients my Tzatziki does not get watery. I like the sauce thick to stick to my kofta. Great recipe and very flavorful. Thank you for sharing.
