These delicious Zucchini Pizza Boats are quick, cheesy, and the perfect solution to all your pizza cravings. The zucchini bakes up soft but sturdy enough to hold all the sauce, sausage, and gooey mozzarella without falling apart. It's pizza night without the dough!
They are so easy to customize too. Just swap the sausage for ground beef, turkey or even leftover chicken in the fridge. You don’t need a lot of ingredients or prep time, and they always turn out satisfying. Whether it’s lunch, dinner, or a simple weekend meal, these pizza boats always hit the spot.

- Italian sausage
- Mozzarella cheese

Preheat oven to 375°F.
Take each zucchini, wash, dry and slice in half lengthwise to give you 6 halves.
Scoop out of the centers of each half, creating a well to fill.
Spoon in 1 tablespoon of pizza sauce and spread evenly in each half.
Add 1 tablespoon of the cooked Italian sausage, spreading evenly.
Add some mozzarella cheese over the sausage. Top with the mini pepperoni.
Place in a 9 x 13 casserole baking dish that’s been sprayed with olive oil.
Bake for 20-25 minutes or until cooked through and the cheese is melted and golden.
💡 Tips
- Choose zucchini that are medium in length, and slightly firm with smooth skin.
- Don’t over-scoop. Leave some flesh around the edges so the boats don’t collapse.
- Avoid overfilling. Too much sauce or cheese can cause overflow and soggy bottoms.
- Place the boats close together while baking to help them hold their shape.
- Let them rest for 5 minutes before digging in so the cheese has time to settle.

- Fridge: Store leftovers in an airtight container for up to 3 days. When ready to enjoy, reheat them in the oven at 350°F until warmed through, about 10-12 minutes.
- Freezer: Zucchini can get mushy once frozen so I do not recommend it. But you can prep the sausage and sauce ahead and freeze to save time.
