    The vibrant mix of bell peppers, zucchini, mushrooms, and cherry tomatoes not only looks great but tastes amazing.     🛒 Ingredients for Air Fryer Vegetable Kebabs

    • Mushrooms
    • Zucchini
    • Tomatoes
    • Bell peppers

    🔪 How to Make Air Fryer Vegetable Skewers

    Preheat your air fryer @400°F for 5 minutes.

    Cut the bell peppers and red onion into large pieces that are similar in size, then add them to a mixing bowl.

    Wash, dry and slice the zucchini into rounds about ½” thick.  Add them to the bowl with the onions and peppers.

    Clean your mushrooms and tomatoes, then add them to the same bowl.

    Drizzle the olive oil over the top, then sprinkle in the Herbs de Provence and garlic salt, then gently toss to combine.  Make sure all the veggies are well coated.

    Skewer the veggies alternating each type until all have been skewered.

    Air fry for 6-8 minutes or until cooked through.

    💡 Tips for Making Vegetable Kebabs

    • Always preheat your air fryer before cooking. This ensures that your veggies cook evenly and get that nice color on the outside.
    • Make sure all your vegetable pieces are roughly the same size. This ensures they cook at the same rate and avoids unevenly cooked kebabs.
    • Arrange the skewers in a single layer in the air fryer basket, making sure there's a little bit of space around each skewer. Overcrowding can cause then to cook unevenly.
    • Before skewering, toss your vegetables in olive oil and seasoning to ensure they’re evenly coated. This is what gives them consistent flavor and texture.
    • Since air fryers can vary in the way they cook, start checking your veggies a minute or two before the suggested cooking time is up. They should be tender and slightly crispy on the edges.

    ☑️ Storage Instructions

    Allow the kebabs to cool to room temperature before transferring to an airtight container.  Store in the refrigerator for up to 3-4 days.

    To reheat, place the kebabs back in the air fryer or a hot oven for a few minutes until heated through.
