💡 Tips for Making Chicken Florentine Soup

    • While rotisserie chicken saves time, feel free to use leftover chicken breast or thighs.
    • Excess water in the spinach can thin out the creamy broth. Squeeze it well before adding to the soup.
    • Soften the cream cheese at room temperature or microwave briefly to prevent lumps.
    • Add the parmesan cheese gradually to avoid it from clumping.
    • Simmer, don’t boil. Once the cream cheese is added, keep the heat low to maintain the creamy texture.

    ☑️ Storage Instructions

Freezer: Freeze in individual portions for up to 2 months. Thaw it overnight in the fridge before reheating.

🍴 What to Serve with Creamy Chicken Forentine Soup

This soup is satisfying enough by itself or with a simple side salad. You can serve a hot bowl of this chicken and ham soup with a slice of this homemade Cornbread. It's also great with these Dinner Rolls, Braided Herb Bread, or some of these Keto Ranch Crackers.

    🔄 Substitutions and Additions

    • Spice: Add a pinch of red pepper flakes or cayenne pepper for subtle heat.
    • Sun-dried tomatoes: Stir in chopped sun-dried tomatoes for a tangy, slightly sweet twist.
    • Lemon juice: A squeeze of fresh lemon can really brighten the flavors.
    • Heavy cream: If you need to thin it out, you can add a little heavy cream for a richer, more indulgent broth.
    • Fresh baby spinach: Use fresh spinach instead of frozen. Just add it at the end to wilt.
    • Crumbled bacon: Sprinkle crispy bacon on top for added flavor and texture.
    • More veggies: Diced carrots, celery, or zucchini are great additions. Just add them with the onions and sauté until tender.

    Why is it called Florentine?

Florentine simply means a dish that includes spinach, inspired by the cooking style from Florence, Italy. It’s a nod to their love of adding spinach to hearty, flavorful meals.

Can I Make this Soup in the Instant Pot?

Yes! Use the sauté function to cook the mushrooms, onions, and garlic. Then, add the broth, chicken, spinach, and cream cheese. Pressure cook on high for 5 minutes, release the pressure, stir in the parmesan, and you’re done.

What’s the Easiest Way to Shred Chicken Quickly?

For rotisserie chicken, pull it apart with two forks. If you’re cooking chicken from scratch, try using a hand mixer or stand mixer to shred it quickly.

Can I Make This Broth Thicker?

Sure. Just use less chicken broth or stir in a slurry of cornstarch and water (1 tablespoon each) while simmering.
