    • Andouille sausage
    • Bell peppers (you can use a combination of green, yellow or red bell pepper)
    • Zucchini
    • Fire roasted tomatoes
    • Cauliflower rice
    • Chicken broth
    • Red onion
    • Tomato paste
    • Garlic
    • Olive oil
    • Butter
    • Smoked paprika
    • Garlic salt
    • Dried thyme
    • Dried oregano
    • Cayenne pepper

    🔪 How to Make Cajun Sausage and Peppers

    Slice your andouille sausage into bite-size pieces.

    Heat a large skillet over medium heat and add the sausage. Sauté for a few minutes, then remove and set aside.

    Leaving any drippings in the skillet, add in the butter, olive oil, peppers, and red onion.

    Sauté until they are tender. Then add in the garlic and cook for another 15 seconds, making sure not to brown it.

    Add in the dried oregano, thyme, smoked paprika, cayenne pepper, and garlic salt, allowing them to toast for 30 seconds.

    Pour in the tomatoes, tomato paste, and chicken broth, then stir until well combined.

    Then stir and simmer on low for 8-10 minutes, or until the zucchini is tender but not mushy.

    💡 Tips For Making Cajun Sausage and Peppers

    • Prep work: Need to save some time? Get a jump on this recipe the night before by cutting the andouille sausage into bite-sized pieces and slicing all the veggies. Store them in separate containers in the fridge until you’re ready to cook.
    • Sautéing sausage: Color is key. When sautéing the andouille sausage in the skillet, aim for a golden-brown exterior. This is where so much of the flavors come in. Just be careful not to burn them.
    • Simmering: During the simmering phase, keep the heat low and stir periodically. This allows the flavors to meld together, without overcooking them.
    • Timing the zucchini: Pay attention to the zucchini's texture during the simmering process. It should be tender but not mushy. Adjust the cooking time if needed to achieve the desired level of doneness.

    Fridge: Let the Cajun sausage skillet cool to room temperature before transferring to an airtight container. You can store in the refrigerator for up to 3-4 days.  

    Freezer: If you plan to freeze portions for later, allow the dish to cool completely before transferring it to a freezer-friendly container. Seal tightly, and it can be stored in the freezer for up to 2-3 months. To reheat, thaw in the refrigerator overnight and warm on the stovetop or in the microwave until heated through.

    Cajun sausage: Cajun sausage can be a variety of sausage. It can be made with different meats, seasoned with herbs and spices like paprika and cayenne pepper.  The texture is more similar to regular smoked sausage compared to andouille.

    Ingredients
     

    • 13 ounces andouille sausage
    • 1 red bell pepper, sliced
    • 1 yellow bell pepper, sliced
    • 1 small zucchini, cut into half moons
    • 15 ounce can fire roasted tomatoes, liquid included
    • 12 ounces frozen cauliflower rice, thawed
    • ⅔ cup chicken broth
    • ½ cup red onion, sliced
    • 2 tablespoons tomato paste
    • 3 cloves garlic, minced
    • 1 tablespoon olive oil
    • 1 tablespoon butter
    • 1 ½ teaspoons smoked paprika
    • ½ teaspoon garlic salt
    • ½ teaspoon dried thyme
    • ¼ teaspoon dried oregano
    • ¼ teaspoon cayenne pepper

    Instructions
     

    • Slice your andouille sausage into bite size pieces.
    • Heat a large skillet to medium and add in the sausage. Sauté for a few minutes, then remove and set aside.
