    This Greek roasted chicken thighs recipe is one of those dinners you’ll want to make time and time again. Tender chicken thighs and fresh veggies are marinated in a zesty homemade mixture that infuses them with wonderful citrus and garlic flavors.  

    Briny Kalamata olives, juicy tomatoes, and feta cheese are added to give it that perfect Greek twist. As the ingredients roast on a single sheet pan, the chicken becomes super tender and pairs perfectly with the roasted zucchini, peppers, and onions. The blend of ingredients results in an overall mouth-watering meal that the whole family will love.

    🛒 Ingredients for Greek Sheet Pan Chicken Dinner

    • Chicken
    • Bell peppers
    • Zucchini
    • Tomatoes
    • Red onion
    • Kalamata olives
    • Feta cheese
    • Garlic
    • Lemon
    • Red wine vinegar
    • Parsley or mint
    • Olive oil
    • Dried oregano
    • Salt
    • Ground black pepper

    🔪 How to Make Greek Sheet Pan Chicken with Feta

    In a small mixing bowl, add in the olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and pepper.

    Whisk until well combined.

    Add the chicken to a food storage bag, then pour ⅔ of the marinade over the chicken.

    Seal up the bag and massage the marinade into the chicken, making sure all sides are well coated.  Marinate in the fridge for 1 hour.

    Preheat the oven to 425°F. Place the marinated chicken on a baking sheet.

    Add the bell peppers, red onion, and zucchini to a large mixing bowl. Pour the remaining ⅓ of the marinade over the top and toss to combine.

    Pour the veggies around the chicken, then bake for 15 minutes.

    Take the sheet pan out of the oven and add the tomatoes and Kalamata olives over the veggies.  

    Continue baking for 15-20 minutes or until the chicken is cooked through and reaches a temperature of at least 165°F when checked with a meat thermometer.

    Add the crumbled feta, chopped parsley, or mint, and pour the pan juices over the top. Serve with a squeeze of lemon.

    Sheet pan recipes are straightforward and easy by nature. But here are a few basic tips to keep in mind.

    • Ensure the chicken is evenly coated with the marinade by massaging it on all sides.
    • For the best flavor, don’t rush the marinating time. It really helps the flavors penetrate the meat.  
    • To ensure everything is done at the same time, stagger the addition of the ingredients as directed.
    • Invest in a meat thermometer. For safety reasons, make sure the chicken reaches an internal temperature of at least 165°F using a meat thermometer.

    Ingredients
     

    • 6 chicken thighs, boneless and skinless
    • 2 bell peppers, mix of colors sliced
    • 1 medium zucchini, cut into half moons
    • 1 cup cherry tomatoes
    • ½ red onion, sliced
    • ⅓ cup Kalamata olives
    • ⅓ cup olive oil
    • ¼ cup feta cheese, crumbled
    • 2 tablespoons fresh lemon juice
    • 2 tablespoons red wine vinegar
    • 1 tablespoon chopped fresh parsley or mint
    • 3 garlic cloves, grated
    • 1 teaspoon dried oregano
    • ½ teaspoon salt
    • ¼ teaspoon ground black pepper

    Instructions
     

    • In a small mixing bowl, add in the olive oil, lemon juice, red wine vinegar, garlic, oregano, salt and pepper.
    • Whisk until well combined. Add the chicken to a food storage bag, then pour ⅔ of the marinade over the chicken.
