Green beans are one of those veggies everyone loves, but just wait until you’ve tried them with this buttery, crispy twist. Fresh beans tossed in garlicky butter, salty prosciutto crumbles, and nutty toasted pine nuts give them a serious flavor and texture upgrade.

The crunch of the prosciutto mixed with the buttery beans makes it irresistible. And the best part is, this is one of those recipes that looks fancy but only takes minutes to prepare. I love serving this at dinner parties because it looks and tastes like an elegant side, but it’s also just as easy to whip up for a busy weeknight dinner.

    💡 Tips

    • Choose green beans that are firm, bright, and snap cleanly when bent. Limp or spotted beans won’t taste as fresh.
    • Trim a bunch of beans quickly by lining them up on a cutting board and slicing off the ends all at once.
    • Pat the beans completely dry after the ice bath, otherwise the butter will slide off.
    • When crisping prosciutto, pull it from the oven as soon as it’s golden. It continues to crisp as it cools.
    • Pine nuts burn fast, so keep them moving in the pan and pull them once lightly golden.

    ☑️ Storage Instructions

Fridge: Store leftovers in an airtight container for up to 3 days. Reheat gently in a skillet.

Freezer: You can freeze leftover cooked green beans, but I really do not recommended it. Cooked green beans lose their texture and be a bit mushy when frozen and thawed.

🍴 What to Serve with Sauteed Green Beans

These beans will pair with just about any protein, these are some of my favorites:

    • Seared Scallops with Garlic Butter
    • Baked Cod with Lemon Beurre Blanc
    • Grilled Steak with Chipotle Lime Butter
    • Honey Glazed Pork Tenderloin
    • Air Fryer Pesto Salmon
    • Oven Roasted Chicken
    • Air Fryer Pork Chops
    • French Onion Chicken
    • Mediterranean Mahi Mahi
    • Cast Iron Steak and Mushrooms
    • Air Fryer Frozen Shrimp

    🔄 Substitutions and Additions

    • Almonds: Swap the pine nuts for slivered almonds or chopped walnuts if you prefer.
    • Lemon: Try sprinkling with lemon zest before serving for a fresh, bright flavor.
    • Cheese: Sprinkle with grated parmesan for extra cheesy goodness.
    • Pancetta: Use pancetta instead of prosciutto if that’s what you have on hand.
    • Heat: Toss in a pinch of red pepper flakes for gentle heat.
    • Shallots: Mix in caramelized shallots or onions for a sweeter note.
    • Mushrooms: For a more filling side, stir in cooked mushrooms before topping with prosciutto.

Can I Use Frozen Green Beans?

Yes, just thaw and pat dry before cooking, but fresh beans will hold their texture better.

Why Did My Prosciutto Turn Chewy Instead of Crispy?

It likely needed more time in the oven or the slices were too thick. Keep them thin for crisp results.

Why Do I Need to Blanch the Beans?

Quickly boiling then shocking them in ice water keeps them tender and vibrant.

Why Does My Garlic Butter Tastes Bitter?

The garlic probably browned too much. Next time, sauté it only for 20 seconds on low heat.

Can I Bake this Recipe Ahead?

Sure. I will sometimes blanch the beans earlier in the day and refrigerate. Then right before dinner, I’ll reheat them in garlic butter, then add prosciutto and pine nuts.
