It starts with chicken that's marinated in a flavorful honey mustard dressing and grilled to juicy perfection.

    Paired with crispy bacon, fresh and juicy vegetables, creamy gorgonzola cheese, and ripe avocado slices, this salad has the best mix of textures and flavors. Served on a bed of crisp romaine lettuce, this salad is both refreshing and satisfying. The homemade honey mustard dressing ties everything together with its tangy and slightly sweet flavors, making it completely irresistible.

    🛒 Ingredients Honey Mustard Chicken Salad

    • Chicken
    • Romaine lettuce
    • Honey Mustard Dressing
    • Tomatoes
    • Cucumber
    • Bacon
    • Avocado
    • Gorgonzola or blue cheese
    • Red onion

    🔪 How to Make Grilled Honey Mustard Chicken Salad

    Prepare the honey mustard dressing using Country Dijon mustard, instead of regular Dijon mustard, per the recipe. I swap out the mustard for this recipe, to include a more grainy mustard, as it really adds great flavor to the chicken and salad.

    Add the chicken to a food storage bag and pour in ⅓ cup of the honey mustard dressing, reserving the rest for the salad.

    Seal up the bag and marinate in the fridge for 4-6 hours.

    Preheat your outdoor grill or grill pan, then, once ready, grill the chicken until it reaches at least 165°F.  Then remove from the grill and allow it to rest while you make the salad.

    Wash, dry and chop the romaine lettuce, then place it on a platter.  I love to use my salad spinner to make it easier.

    Slice the tomatoes in half and the cucumbers into half moons. Place them in groups on top of the lettuce, along with the crumbed bacon.

    Once the chicken has cooled enough to handle, slice it and place it over the lettuce, along with the sliced red onion, also in groups.

    Slice the avocado and place it and the crumbled gorgonzola in the remaining empty spaces over the lettuce.

    Pour the reserved honey mustard dressing over the top and serve.

    ☑️ Storage Instructions

    This salad is best served when freshly prepared because the warmth of the chicken will begin to make the lettuce wilt. If you have leftovers, you can remove the chicken and store it separately from the veggies in the fridge.

    💡 Tips for Making Honey Mustard Chicken Salad

    • Allow enough time for the chicken to marinate for at least 4-6 hours to fully absorb the flavors of the honey mustard dressing. The longer the marination, the more flavorful the chicken will be.
    • To get those nice char marks, make sure you preheat the grill or grill pan properly before placing the chicken on it.   
    • After grilling, let the chicken rest for a few minutes before slicing. This helps retain the juices and keeps the chicken moist and tender.
    • For this recipe, you want to cook the bacon until it's crispy. This adds a wonderful crunch to the salad, which is a delicious contrast to the creamy cheese and avocado.
    • For the freshest and most crisp salad, assemble it just before serving. This prevents the lettuce from wilting from the warmth of the chicken.

    🔄 Substitutions and Additions

    • Greens: Substitute romaine lettuce with mixed greens, spinach, arugula, or kale for different textures and flavors.
    • Dressing: Homemade dressing is healthier and tastes better but you can use a store-bought honey mustard dressing if you’re short on time. You can also try using this balsamic dressing instead of honey mustard.
    • Cheese: Swap gorgonzola or blue cheese with feta, goat cheese, or shredded cheddar.
    • Protein: Substitute grilled chicken with rotisserie chicken, turkey, or grilled shrimp for a different protein option. You can add grilled tofu or chickpeas for a vegetarian version.

The homemade honey mustard dressing also allows you to control the ingredients and avoid preservatives found in store-bought versions.

    How Can I Tell If My Grilled Chicken Is Done?

    The best way to ensure your grilled chicken is done is to use a meat thermometer. The internal temperature should reach 165°F. If you don't have a thermometer, you can also check by cutting into the thickest part of the chicken breast; the juices should run clear, and the meat should no longer be pink inside.
