If you’re short on time and need a quick and easy appetizer to prepare for your guests, you’re going to love this buffalo chicken dip. Not only does it have that classic buffalo wing flavor, but it’s made using all healthy low carb ingredients.
But don’t worry, no one will ever know it’s low carb because it’s rich and so delicious. I use rotisserie chicken to save some time, blend it up with a handful of ingredients and bake until golden and the cheese is melted until gooey and delicious.
The combination of cottage cheese and Greek yogurt gives the dip such a wonderful creaminess, and the cheddar a sharp tangy flavor that your guests will love.

🔪 How to Make Buffalo Chicken Dip with Cottage Cheese
Preheat oven to 400°F.
Add the cottage cheese, Greek yogurt, grated garlic and hot sauce to a high-powered blender or food processor.

Blend until smooth and creamy.

Pour the mixture into a large mixing bowl.

Add in the finely shredded chicken, half the scallions, half the blue cheese and half the cheddar cheese.

Mix until well combined.

Then spread the mixture into a pie dish or 8 x 8 casserole baking dish that’s been sprayed with olive oil.

Add the remaining shredded cheddar cheese over the top and bake for 20 minutes.

Remove from the oven, top with the remaining blue cheese and scallions and serve while still warm.

💡 Tips
- While using rotisserie chicken breast makes things so much easier, you can certainly use your own cooked chicken, whether roasted, or poached. Just be sure to finely chop or shred so that it’s easier to dip.
- You could also assemble this dip ahead of time, then just bake it when you’re ready. This would be ideal if you have a party to throw and don’t have a lot of time the day of the party. This dish would be one that is prepped the night before, to save you time the next day.
- Unless you’re a fan of cottage cheese curds in your dip, which I am not, it’s best to blend it up with the Greek yogurt, hot sauce and garlic before assembling the dip. If you wanted to skip that step, you certainly can and just mix everything in a bowl instead.
- If the hot sauce is a little too hot for your liking, you can use just ¼ cup. This way you still get the flavor, but cut back on some of the heat.

- If you don’t have Greek yogurt, you can use sour cream instead. You will still have that signature tang and the textures are nearly identical.
- Like a little crunch? You can top with some finely chopped celery in addition to the blue cheese crumbles and scallions.
- If you love blue cheese, you can substitute the Greek yogurt with some blue cheese dressing. Just be sure it’s a chunky style that’s not watery, or it will make your dip too loose.
