    If you're looking for a salad that looks as good as it tastes, this beet salad really delivers. Rich burgundy colored beets and bright orange segments stand out like little jewels against a bed of fresh spring mixed greens.

    Crumbles of goat cheese peeks out all throughout the salad, adding even more color, while providing a delicious contrast of flavors and creamy texture. The vinaigrette is so easy to make, yet it has the most incredible sweet and tangy flavors. It's the perfect finishing touch to this amazing salad.

    🛒 Ingredients for Beet Salad

    • Spring mixed greens
    • Baby pickled beets
    • Mandarin oranges
    • Walnuts
    • Red onion
    • Goat cheese
    • Fresh raspberries
    • Light olive oil 
    • Apple cider vinegar
    • Water
    • Honey
    • Shallots
    • Dijon mustard
    • Dried thyme
    • Salt

    🔪 How to Make Pickled Beet Salad

    To Make the Raspberry Vinaigrette 

    Add all of the dressing ingredients in the cup of a bullet blender.

    Blend until well combined and emulsified.  Then set aside, while you prepare the salad.

    To Make the Beet Salad

    Add the mixed greens to a large salad bowl.

    Slice the pickled beets in half. Just a warning, if you’ve never worked with beets before.. THEY STAIN!  So use a cutting board that you aren’t worried about it staining and be sure to immediately wipe up any of the juice that might get on your counter or anything else you don’t want stained.

    Add the sliced beets, mandarin oranges, sliced red onion, toasted walnuts and goat cheese over the mixed greens.

    Right before serving, pour the dressing over the top and toss to combine.

    💡 Top Tip for Working with Beets

     If you’ve never worked with beets before, you should know they stain!!! In fact, beets were used years ago as a way to dye fabric. That's why I recommend wearing disposable kitchen gloves to prevent staining on your hands.

    You'll also want to use a cutting board that you aren’t worried about staining. Be sure to immediately wipe up any of the juice that might get on your counter or anything else you don’t want stained. A vinegar and baking soda mixture can help with the clean up.

    ☑️ Storage Instructions

    You'll want to eat this salad when freshly made. If you happen to have leftovers, they will keep overnight in the fridge in an airtight container.

    🔄 Substitutions and Additions

    • Salad greens: Instead of spring mixed greens, use arugula, baby spinach, romaine lettuce, or kale.
    • Mandarin oranges: Swap mandarin oranges with fresh orange segments or other citrus fruits like grapefruit or blood oranges.
    • Walnuts: Replace walnuts with pecans, almonds, pistachios, or sunflower seeds for added crunch.
    • Cheese: Experiment with feta cheese, blue cheese, or crumbled Gorgonzola.

    Can I Use Canned Beets Instead of Pickled Beets?

    Sure! Just keep in mind that the flavors will be different because pickled beets have a sweet and tangy taste. If using canned beets, you may want to add a bit of vinegar or lemon juice to give them a little tang.

    Can I Make the Raspberry Vinaigrette Ahead of Time?

    Yes, you can prepare the vinaigrette in advance and store it in the refrigerator, in and airtight container, for up to a week. Just give it a good shake or stir before using.

    Ingredients
     

    For the Salad

    • 8 cups spring mixed greens
    • 16 ounce jar baby pickled beets, juice reserved
    • 1 cup mandarin oranges
    • ½ cup walnuts, toasted
    • ⅓ cup red onion, thinly sliced
    • ⅓ cup goat cheese, crumbled

    For the Dressing

    • ⅓ cup fresh raspberries
    • ⅓ cup light olive oil, or avocado oil
    • 2 tablespoons apple cider vinegar
    • 1 tablespoon pickled beet juice from jar
    • 1 tablespoon water
    • 1 teaspoon honey
    • 1 teaspoon shallots, roughly chopped
    • ½ teaspoon dijon mustard
    • ½ teaspoon dried thyme
    • pinch of salt

      I’m allergic to all berries. Can the dressing be made without them?

        I created the berry-based dressing to pair with the flavors in the beets. But, you can use your favorite dressing or the homemade Honey Lime Vinaigrette Dressing on my site.
