If you need an easy, yet elegant dessert that can be made quickly without a ton of effort, you're going to love this recipe. I take my Chocolate Chip Walnut Cookies, chop them up and crumble between layers of an easy cheesecake fluff mixture. They contrast in textures, with the silky creamy filling and crunchy cookie crumbles is incredible!
Not only do they make a pretty presentation, but they're actually healthy, low carb and sugar-free. Enjoy pure decadence without any guilt and very few carbs. If you're serving it to anyone who's not on a low carb diet, they will enjoy it just the same and won't even know it's healthy.

There are many different variations in making a parfait, and I've outlined some different options down below. I hope you give this easy dessert a try, it will not disappoint.

- Chocolate Chip Walnut Cookies
- Cream cheese
- Heavy cream
- Monk fruit/allulose
- Vanilla extract

🔪 How to Make Cookie Cheesecake Parfaits
Add the heavy cream to a cold bowl and whip using a hand mixer, until you have soft peaks, then set it aside.

In a separate bowl, add in the cream cheese, then fluff it up using your hand mixer.

Add in the sweetener and vanilla extract, and continue mixing.

Pour in the whipped cream.

Continue mixing, just until combined.

Transfer the mixture to a piping bag fitted with the tip of your choice.

Pipe some of the mixture into the bottom of your serving glass or jar.

Take the chocolate chip walnut cookies and chop them up into small pieces.

Sprinkle over the cheesecake mixture in the jar.

Then repeat each layer ending with the cheesecake mixture and top with more chopped cookies. It’s ready to serve.
💡 Tips
- You can prepare these in advance, so if you’re having a dinner or other get together with guests, you can layer in your serving glasses and chill until you’re ready to serve.
- Don’t over whip the heavy cream or you will end up with butter.
- Do make sure you whip it to soft peaks, otherwise when you add in the other ingredients, it won’t be thick enough to pipe out into the serving glasses.
- Fluffing up the cream cheese before adding in the sweetener, really helps mix those in so they are well blended.
- If you don’t have a piping bag, you can use a food storage bag. If you don’t have a piping tip, you can simply snip off the corner of the bag and it will pipe out just fine. I used a round tip, but you can use a star or other fancy tip if you’d like.
- If you’re hosting a party, you can also make these in mini version. Grab some shot glasses and layer the cheesecake mixture and chopped cookies in them and serve.

Store leftovers in an airtight jar for 3-5 days in the fridge.

🔄 Substitutions and Additions
- If you already have other cookies on hand and ready to use, you can certainly use what you have instead. Just be sure to chop them up in small pieces to make the parfaits easier to eat.
- If you don’t have or want to make cookies at all, you can use some jam instead, this Mixed Berry Jam can be made with a bag of frozen mixed berries in just 20 minutes. Once it cools, you can layer it between the cheesecake layers.
- Granola is also a great substitute for the cookies. I also make my own Homemade Granola that you can use for added crunch and flavor.
- Turn the cheesecake mixture into a chocolate dream, add in the unsweetened cocoa powder and a little more sweetener while mixing, then layer the chopped cookies.
- Another chocolate alternative is to use this Easy Chocolate Mousse instead of the cheesecake mixture, then layer the chopped cookies.
- If you don't have or can't have cream cheese, mascarpone cheese makes the perfect substitute. It has the exact same texture and a very mild flavor, plus it's healthy and low in carbs.

- 8 ounces cream cheese
- 1 cup heavy cream
- ⅓ cup monk fruit/allulose
- 1 teaspoon vanilla extract
