🔪 How to Make Greek Salad Skewers

Add the dressing ingredients to the cup of a bullet blender.

Blend until well combined and emulsified.

If you don’t have a bullet blender, you can use a mixing bowl and whisk.  The bullet blender does help the dressing emulsify, so it won’t separate.

Take your veggies and feta cheese and thread one of each on 4” party picks.

Place on a serving platter with the lemon dressing drizzled over the tops and served on the side for dipping.  Sprinkle the dried oregano and fresh mint over the skewers and serve.

💡 Tips for Making Greek Salad Skewers

    • Cut even pieces: To ensure each skewer is balanced, keep your veggies and feta chunks roughly the same size.
    • Use firm feta: A block of feta works best. Crumbled feta won’t hold up on the skewers.
    • Chill before serving: Refrigerate the skewers for 15-20 minutes to enhance their flavors.
    • Wait to add dressing: Drizzle the dressing just before serving to keep the veggies crisp.

    ☑️ Storage Instructions

Store leftover skewers in an airtight container for up to 2 days. Keep the dressing separate and add just before serving. I do not recommend freezing because the vegetables will lose their crispness.

🍴 What to Serve with These Zesty Veggie Skewers

Proteins: Pair these skewers with chicken, Air Fryer Shrimp, lamb, or savory Beef Filet as a delicious and flavorful complete meal.

Hummus: Serve alongside warm pita bread and Roasted Garlic Hummus or Roasted Red Pepper Hummus for a satisfying snack spread.

Tzatziki sauce: Add a side of tangy Tzatziki for even more Greek-inspired dipping goodness.

Charcuterie board: Add to a Mediterranean appetizer board with other Green favorites like Marinated Mushrooms, olives, stuffed grape leaves, and cheeses.

    🔄 Substitutions and Additions

    • Swap the veggies: Use mini heirloom tomatoes or roasted red peppers for a colorful twist.
    • Marinated feta: Soak your feta cubes in olive oil, dried oregano, and lemon zest for even more flavor.
    • Add artichoke hearts: Thread small marinated artichoke hearts onto the skewers for an extra Mediterranean bite.
    • Sprinkle with sesame seeds: Add toasted sesame seeds for a hint of crunch and nutty flavor.
    • Use balsamic glaze: Drizzle a balsamic reduction for a tangy-sweet alternative to the lemon dressing.
    • Add fresh herbs: Garnish with chopped dill, parsley, or extra mint for an extra pop of freshness.

Can I Make Greek Salad Skewers Ahead of Time?

Yes, you can assemble the skewers a few hours in advance and store them in the fridge. Add the dressing right before serving.

    Why is My Dressing Separating?

This happens if it’s not fully emulsified. Use a bullet blender or whisk it vigorously until combined.

How Do I Keep the Feta From Crumbling?

You want to use firm, block feta and cut it into sturdy cubes. Handle gently when threading onto the skewers.

    What Size Skewers Work Best?

Small wooden skewers or 4-inch party picks are ideal for these bite-sized appetizers.

How Do I Make These Dairy-Free?

Simply omit the feta or replace it with a plant-based cheese alternative and you'll have the perfect dairy-free appetizer.
