If you're looking for a new homemade dressing that's creative and not like anything you can buy at the grocery store, try this Lemon Tahini Dressing! It has a hint of flavor that's similar to traditional hummus, which of course uses tahini paste, as this dressing does.

I add a punch of tanginess with white wine vinegar and some fresh lemon juice. The texture is perfectly creamy and smooth, which sticks to your salad or veggies, without being runny. You can also use this dressing as a dipping sauce, but I have listed some creative ways to use it down below.

Add all the ingredients to the cup of a bullet blender.

💡 Tips
- Be sure to mix your tahini paste well before measuring it out. Some store bought brands have separated somewhat, so the solids are mostly towards the bottom of the container.
- Use fresh lemon juice. Since this is a fresh dressing, this is definitely not the time to use the bottled stuff. You use a decent amount in this dressing, so it's important that it's fresh.
- Use a good quality extra virgin olive oil, it makes a difference, I promise!
- While you technically can make this dressing in a bowl with a whisk, I have found it blends up much creamier in a bullet blender. An immersion blender or mini chopper would also work well.
- If you want the dressing to be a little looser, add a little more water to thin it out some, then continue blending.
- If you want to serve this dressing as a dip, add less water, check the consistency and you can always add more if you need to. If it becomes too loose, add in a tiny bit of tahini paste to thicken it up some.

- If you don't have white wine vinegar on hand, you can use apple cider vinegar instead.
- If you prefer not to use vinegar and want to ramp up the lemon flavor, you can leave out the vinegar and just use more lemon juice.
- If you are not trying to keep your carbs low, or don't want to use sugar-free honey, you can use regular honey instead.
- If you're Vegan, you can substitute the honey with pure maple syrup, just know this will change the flavor somewhat. Or you can use a sugar-free low carb maple syrup instead.
- For a little hint of herbs, you can add in a pinch of dried oregano or dried dill.
